Bobotie is a dish popular in South Africa (originally made popular by the Cape Malay community), it consists of a spiced lamb mince based filling (though other meat can be used, or lentils in the case of this vegan version), topped with an egg-based topping (made using chickpeas for the vegan version). The mince meat filling is placed on the bottom, then the topping is added, some people add a bay leaf to the top and then it’s baked in the oven until cooked through and golden. It can be served with vegetables and rice.
