Sponge cake flavoured with lemon, topped with a light strongly lemon flavoured icing which is allowed to drizzle into the cake. This creates a cake with a beautiful lemon flavour. Lemon drizzle cakes can be in any shape, but this one is a two-teir circular cake. This version is also vegan friendly, as it uses aquafaba instead of eggs (hence the chickpeas).
Notes:
– Must be baked as whole cake (you can’t bake a single slice of cake)
– Vegetarian-safe.
– Optional SCCO preserves & icemunmun chickpea , and EA lemon (cake can still be cooked without)
